Sweet and sour yellow croaker is a must-have dish for my hometown's feast. It's also a taste suitable for all ages. The crispy fish is very delicious with sweet and sour juice.
Step1:The yellow croaker uses the back of the knife to get rid of the scales, gills and internal organs of the belly of the fish. It is cut into three sections (head, body and tail). Step2:Put the fish fillet, head and tail into the basin, add cooking wine and salt, and massage gently. Then add the egg white, flour and dry starch (flour and starch 3-1) and knead for 15 minutes.

Step4:Shape the dish and sprinkle with shredded onion and carrot.
Step5:Boil sugar and vinegar juice - put a small amount of oil in the pot. Add sugar. Boil the caramel color on a small heat, then add 2 small bowls of cold water. A little salt. Boil the sugar and vinegar, then add rice vinegar (sugar and vinegar ratio 3-2). Thicken with water starch.
Step6:Pour the mixed sweet and sour juice on the fish while it's hot.
Cooking tips:1. Boil the caramel color on a low heat. Stir while boiling. 2. Can't cook sugar. You can use tomato sauce + water + sugar + rice vinegar. You can also get beautiful sugar. 3. It's better to taste the sweet and sour juice before it's out of the pot. Add more if it's a little less. Adjust the taste according to the family's taste. 4. Yellow croaker can be replaced by carp and perch. There are skills in making delicious dishes.
