Pea yellow is one of the special snacks in old Beijing. It has a delicate taste and pure fragrance of peas. I used to buy it from a time-honored snack bar. I came across the way of making pea yellow. I knew it was so simple.
Step1:After cleaning the peas, soak in 600g water for at least 4 hour
Step2:Put the soaked peas and water into the pressure cooker. Select the bean gear (the pressure holding time of my pressure cooker is 25 minutes).
Step3:Add 80g white granulated sugar to pea puree and stir until completely melted. Then sift pea puree into lunch box.
Step4:After all sieving, use a scraper to scrape the pea mud surface flat. Cover the pea mud and cool it naturally. Then put it into the refrigerator for refrigeration.
Step5:Pea yellow can be easily poured out of the lunch box after it is completely cooled. Don't worry about sticking.
Step6:Cut the yellow peas into small pieces and put them on a plate.
Cooking tips:1. Be sure to use peeled dried peas. They can be bought online. 2. The sieving step must be fast. It's better to sift when the pea mud is still hot. It can also make the surface of the pea mud self leveling. Once the temperature drops, the pea mud will solidify. It's not easy to operate. There are skills in making delicious dishes.
