Step1:My frozen meat skin is made of pig skin. After buying it, I soaked it in water for 1 hour. When soaking, I put 2 pieces of green onion, 2 pieces of ginger and 2 spoonfuls of yellow wine in the water. This can remove the fishiness.
Step2:The most important thing for making frozen meat skin is to blanch it. This can further remove the smell of fishiness. When blanching, use cold water. Put 2 pieces of ginger and 2 pieces of onion in the water.
Step3:When blanching, turn off the heat after boiling. Remove the floating powder and cook for 3 to 5 minutes.
Step4:Take out the pigskin while it's hot. Carefully pull out the pigskin with a clip. When plucking pig hair, it should be soaked in a basin with hot water. Otherwise, the pigskin will be hard. It is not easy to pluck pig hair.
Step5:After cleaning all the pig fur, you need to use a knife to scrape both sides of the pig skin. Scrape off the excess fat on the meat skin. This step can't be omitted. It's the most crucial step to decide whether the pig skin jelly is delicious or not.
Step6:The pigskin will be boiled after it has been cleaned. When cooking the pigskin, you don't need to put too much seasoning. Just put onion and ginger. This can keep the original taste of the frozen pigskin and highlight the freshness of the pigskin. Two spoons of white glutinous rice wine should also be put in. One is to remove the fishiness again. The other is that the soup tastes sweet after taste. Pig skin should be boiled for at least 1 hour. In this way, pig skin soup can be thick. The frozen meat skin can be q-shaped. It's OK to cook with a small fire. Put 2 tablespoons of salt into the soup after cooking. Don't over taste the salt.
Step7:Take out the pigskin after cooking it.
Step8:Cut each piece of pig skin into strips. The width of the strips depends on your preference.
Step9:Put the cut pig skin in the fresh-keeping box, and then pour in the boiled pig skin soup. When I make frozen meat skin, the meat skin silk and the meat skin soup put into the lunch box are 1:2.
Step10:Cover the lunch box, put it at room temperature and refrigerate it for about 24 hours.
Step11:When eating, you can slice or dice the frozen meat skin.
Step12:Prepare a bowl of your favorite sauce. My sauce consists of soy sauce, vinegar, shallot, garlic powder, chilli circle and sesame oil.
