Step7:Open fire. Wait for the butter in the pot to melt completely. When the milk is boiled, quickly pour in the low powder prepared in front. Turn off the fire and stir well. (be sure to turn off the fire after pouring, or the pot will burn.
Step8:Pour the hot dough into another clean basin (personal habit. This can avoid the agglomeration of flour at the bottom of the pot). After the eggs are broken up, they are added to the dough three times in succession. Mix well with a scraper. This link is an important step for the success of puff ball later. So I said that patience is needed here.
Step9:Make sure to mix well before adding the egg liquid for the second time (as shown in the figure

Step14:Bake for 10 minutes at 190 ℃ in the middle layer of the oven. Then bake for 10 minutes at 170 ℃ and 160 ℃... Don't open the oven during the whole process. And be sure to watch it at the last few minutes. After the color is satisfactory, it's OK.
