Spring shoots. Southerners eat more. I used to eat bamboo shoots every year in my hometown of Sichuan. They are braised meat, chicken, oil and cold As a seasonal vegetable, the bamboo shoot has become a favorite on the spring table with its unique and super high nutritional value. I asked my friend to send me the bamboo shoots just unearthed. I can't wait to cook the meat. The pork is fat but not greasy. The spring shoots are crisp and refreshing. The two complement each other. They are also a classic match. -
Step1:Flesh with skin: 600g, fat and thin, cut into squares.
Step2:One scoop of raw soy sauce is about 15g. The second half is old soy sauce. Pour it into a small bowl. Set aside.
Step3:Two star anise, three rock candy and some pepper.
Step4:Hot pot, cold oil, less oil. Add pork, stir fry and refine after oil is hot.
Step5:If you like to dry it, you can make more oil. If you like to glutinous it, you can stir fry it until it's golden on both sides, then pour out the extra oil. Then add a few drops of cooking wine, old soy sauce, raw soy sauce, star anise, prickly ash and crystal sugar. Stir fry together.
Step6:Then add water. Cover the ingredients in the pot.
Step7:Pour into the pressure cooker together. Heat it first, then simmer it for 20 minutes.
Step8:Prepare two spring shoots. Peel and wash.
Step9:Cut the asparagus into hob pieces. Put them aside.
Step10:Boil the water in the pot. Put in the asparagus. Add some salt and sugar. Cook for three minutes. Remove the excessive oxalic acid and astringency from the asparagus. Then take it out for backup.
Step11:Twenty minutes later, the pressed streaky pork has become soft and waxy.
Step12:Pour the water and streaky pork into the frying pan.
Step13:When the water boils, add the asparagus.
Step14:Add onion.
Step15:Cover the pot. Boil over high heat. Turn to medium low heat.
Step16:Add a little salt to taste when there is a little soup left.
Step17:Stir fry back and forth when collecting the juice finally. Avoid frying.
Step18:After the soup is collected, it can be served.
Step19:The stewed pork is rotten. The taste of bamboo shoots tends to catch up with that of pork. I love it so much.
Step20:With rice. Ouch. Delicious.
Cooking tips:1. When the streaky pork is put into the pot, the oil must be less, because the streaky pork will continue to produce oil in the process of frying and stewing. After frying, you can pour out the extra oil. Otherwise, the final juice can't be collected cleanly. 2. It is recommended to boil the bamboo shoots for three minutes before they are put into the pot. Then, cook them with streaky pork. Do not boil the astringency of the bamboo shoots into the meat. There are skills in making delicious dishes.
