I used to make spareribs. They were usually used to make soup or braised in brown sauce. Later, I made sugar and vinegar. I found that there was not enough to eat on the table. I didn't even have any juice left. My sweet and sour spareribs are simple. They don't need to be fried. They're not greasy. They smell of vinegar. They're moderate in sour and sweet. If you like sweet and sour spareribs, you can try my way.
Step1:Heat up the oil. Fry the ribs a little.
Step2:① pour in cooking wine, rice vinegar, vinegar, soy sauce and sugar. ② The amount of ingredients may not be strictly in accordance with the formula above. Friends who like acid can put a little more vinegar. Then put less sugar.
Step3:① pour in boiling water, cover the pot, and bring it to a boil over high heat. Mix with medium heat to continue cooking. ② When there is still some water left in the pot, turn on the fire to collect the juice (this step is very important, otherwise the water in the soup is not delicious
Step4:The ribs are especially bright after the juice is collected in the fire. Don't dry them all. Keep some juice. Take it out. Sprinkle with sesame seeds. Serve.
Cooking tips:1. Pay attention to the amount of water in the pot at the later stage of cooking to prevent it from drying out. I didn't pay attention to the griddle. The ribs in the griddle are useless. 2. Because of the cooking wine, ginger can not be put. 3. The last step of collecting juice from the fire must be done. It's very important. There are skills in making delicious dishes.
