Step1:Prepare materials.
Step2:Cut the lotus root into thin slices. Put it into clear water. Soak in a little white vinegar for 5 minutes. Prevent the lotus root from oxidation and blackening. Wash off the excess starch. Peel and clean the garlic. Cut into mashed garlic. Wash the millet and pepper. Cut into small sections obliquely. Wash the coriander and cut into small sections.
Step3:Blanch and scald the lotus root in a boiling water pot for about 3 minutes, then remove it (add a little white vinegar in the pot to prevent the lotus root from oxidation and blackening). Soak it in ice water for 5 minutes and drain it.
Step4:Put the mashed garlic and millet pepper into the bowl. Pour in hot oil. Add in the soy sauce with the soy sauce, vinegar and sugar.
Step5:Add the sauce and coriander to the lotus root and mix well.
