Qingming Festival is coming. It's time to learn how to be a Youth League. All kinds of flavor of green dumplings are gradually on the market. But I still like bean paste green dumplings best. The classic flavor has its reasons. It's not complicated. It takes a little time and patience. Please read my recipe carefully. Also, if you don't want to make it at home, you can buy it out of the box, which will save you a lot of time. The proportion of sticky rice flour and glutinous rice flour can be adjusted properly. The green dough made by my formula will be more resilient. Friends who like soft glutinous rice flour can reduce the amount of sticky rice flour and increase the amount of glutinous rice flour.
Step1:1. Soak the red beans 24 hours in advance, and then put them into the pressure cooker to boil. Drain the excess water, as shown in the figure. Note - I prefer the red bean sand with a grain sense. If I like the red bean sand with a delicate point, I'll sift it. Or I'll buy the ready-made one directly.
Step2:2. Take 500g cooked red beans and put them into the pot (non stick pot). Add lard and sugar. After melting, stir continuously. The time is about 1520 minutes. Note - the hand must be stirred continuously. Otherwise, it will burn easily.
Step3:3. This is a good red bean sand. There is no excess water. It can form.
Step4:4. Divide into even sized balls. About 12 shapes.
Step5:5. Glutinous rice flour mixed with glutinous rice flour.
Step6:6. Heat and hydrate barley seedling powder / wormwood powder. Add sugar. Stir well.
Step7:7. Pour the green water into the powder. Knead it by hand, then add lard. Knead it into a smooth dough.
Step8:8. When the lard is fully integrated into the dough, let it cool.
Step9:9. Start wrapping below. Take some dough. Put red bean paste in the middle. Pinch tightly.
Step10:10. Close down. A Youth League is finished.
Step11:11. It is recommended to find this baking paper. Cut it into small pieces and put it under the green dough.
Step12:12. Put the green dough into the steamer. Boil the water and steam for 10 minutes.
Step13:13. After steaming, brush a layer of oil on the surface.
Step14:14. Oil it all. Squeeze the sides of the baking paper and take it out.
Step15:15. The Youth League is finished.
Step16:16. This recipe can make about 12 bigger green balls. It can be given to friends or relatives.
