Step1:Separate two yolks from four proteins.
Step2:Add the two yolks into the sifted flour and milk and mix them well.
Step3:Add 4 proteins into white sugar for 3 times and beat them into a crooked shape that is not easy to disappear.
Step4:Add the beaten protein into the yolk paste in 3 times and mix well.
Step5:Preheat the pan, apply a layer of oil, and keep the whole process at a minimum. Use a deeper spoon to add the egg paste twice into the pan. Drop a few drops of water on the side. (pay attention not to drop water into the batter) cover the pan for 5 minutes.

Step9:Delicious flat pan shuflei egg cake.
Cooking tips:The whole process should be done with minimum fire and minimum fire. The shuflei egg cake made of two yolks and two proteins is relatively flat. It is not as fluffy as the one made of four proteins. There are skills in making delicious dishes.
