Famous Anhui dishes. It is said that this dish was created in Shanghai by HUICAI chefs in the late Qing Dynasty. Huichumiao put the traditional famous Huizhou snack Shendu package into the soup, so that the feast dishes and snacks are one and the same, and become a famous dish in Huizhou cuisine.
Step1:Cut the fat duck from the back, remove the internal organs and wash it. Chop it into 4 large pieces (two legs and two breasts and thighs. The rest are reserved for other purposes). Roll the duck into water until the skin shrinks and tightens. When the blood foam floats, remove it and wash it.
Step2:Divide the duck meat into 4 casseroles. Add 6 cups of water to each pot, proper amount of ginger (flapping), onion (knotting) and sugar. Boil over high heat. Add salt. Stew over low heat until it is crisp and rotten. Put the wonton into the pot. Cover it and put it on the table.
