Recently, I have lost my appetite. It just happened to spring up. It can clear away heat and phlegm, replenish qi and stomach, cure thirst, and benefit waterways. Duck meat nourishes Yin and stomach. Bamboo shoot duck soup is really nourishing Yin, nourishing face, appetizing and strengthening spleen. In the spring when the mountain flowers are blooming and the bamboo leaves are green, eating the bamboo shoots of the season and drinking the soup of nourishing yin and moistening dryness is the most delicious.
Step1:I didn't buy an old duck. I used duck legs. Try to remove some fat from the duck's side legs. Chop the duck leg and wash off the blood. Heat the pot with hot water. Add some ginger and cooking wine. When the water is boiled, put the washed duck meat into the boiling water. When the blood and blood stains are boiled and floated, remove the duck meat. This step can remove blood stains and duck smell.
Step2:Another pot. Wash down the duck meat with water after it is fished out. Then boil it in cold water together with ginger, rice wine and duck meat until boiling.
Step3:Peel the bamboo shoots and boil them in clear water for 5 minutes. Blanch the water to remove the astringency.
Step4:Processing of spring bamboo shoots. Cutting into small sections (slicing is OK).
Step5:Add the bamboo shoots to the boiled duck soup. Simmer for 1.5 hours.
Step6:Put in the washed medlar a minute or two before starting the pot. Sprinkle some shredded coriander before leaving the pot. Mix in salt and enjoy.
Cooking tips:1. Bamboo shoots need to be blanched to avoid astringency. 2. Duck meat is fat. Some oily duck skin can be removed to avoid greasy soup. 3. Duck meat must be blanched to remove blood stains. Add wine and ginger to remove fishiness. There are skills in making delicious dishes.
