Step1:Potatoes. Eggplant cut into hobs. Green peppers cut into diamond. Onion, ginger, garlic cut into pieces. Put 2 tablespoons starch into eggplant. Grasp well.
Step2:Pour oil into the pot. Fry the potatoes for 5 minutes. Fry until the potatoes are golden. Fry the eggplant for 3 minutes. Fry until golden. Fry the green peppers for only 10 seconds.
Step3:(this is my spoon) 1 scoop of soy sauce, 1 scoop of sugar, 1 scoop of starch, 2 scoops of oyster sauce and 3 scoops of raw soy sauce. Then add half a bowl of water. Mix well. If the taste is heavy, you can put some salt and chicken essence if you like salty food. My taste is light, so there is no salt in the bowl juice.
Step4:When the pot is hot, pour in a little oil. The vegetables have already been fried. The oil is bigger. So it's healthier to put less oil. When the oil is hot, stir fry the onion, ginger and garlic. Pour in the bowl of juice. Boil until the soup is small and bubbling.
Step5:Pour in the fried potatoes, eggplant and green peppers. Stir evenly. Make each piece of vegetables evenly covered with soup. Collect the juice on the fire.
