Step1:Cut the shrimps into small pieces (it's OK to chop). Leave some shrimps. It's chewy. Marinate the shrimps with the above materials for 20 minutes. Rinse and drain.
Step2:Mix the shrimp with salt to make the glue. Add ice water in several times. Add the finely cut fat and stir evenly. Season with chicken powder, white sugar and pepper. Add lard and sesame oil. Finally, add carrot (or celery granules. Personal preference).
Step3:Mix the clarified noodles, raw meal and salt evenly. Add boiling water. Quickly mix with chopsticks evenly. Knead into a ball. Add lard and knead for a while.
Step4:Cut the dough into pieces of the same size (I wrap them in a smaller size. 5g each). Press them into thin circles. Add the stuffing. Wrap them into wrinkles. Steam them for 4 minutes after boiling.
Step5:The skin should be as thin as possible. It's delicious.
Step6:Don't use too much force when you pack. The dough has no muscle. It's easy to break.
