I always thought the traditional spicy chicken tasted a little dry. So I made this spicy chicken with pickled peppers according to my own taste.
Step1:Cut the chicken wings into two pieces from the middle and wash them. Then soak them in warm water for half an hour and drain the water. Leave oil at the bottom of the pot. Heat the oil to 70% and stir fry the ginger slices. Put the chicken pieces together and stir fry.
Step2:Stir fry chicken until the skin is yellowish. Add pickled peppers and cooking wine and stir for two minutes.
Step3:Add in raw, old, salt and some boiling water and cook for 15 minutes. When the water is almost dry, add in the cut green pepper and stir fry until it is cut off
Step4:Then pour in a small bowl of water starch. Stir fry over high heat to collect the juice. Pour in a small spoon of clear oil, and sprinkle with scallion.
Cooking tips:I like chicken's middle wing. So we can make it with the middle wing. We can also choose to make it with half a chicken or chicken leg. The taste is the same. There are skills in making delicious dishes.
