Pig's hoof has always been a girl's favorite food. And I especially like to eat Hericium Mushroom. Today, I finally catch up with the vegetable market and have fresh Hericium Mushroom. Before, they were all served in braised pork. This time, I'd like to match the two.
Step1:When buying pig's hoof, you can let the boss cut it off directly. Soak it in cold water for two or more times to let out the blood of the pig's hoof. Then blanch the pig's hoof with water for about 5 minutes. Cut the mushrooms into small pieces. Cut the shallots and ginger. Prepare other seasonings.
Step2:Put a little oil in the pan. Heat it up. Put in onion, ginger, star anise, pepper and fragrant leaves. Stir fry to make it fragrant.
Step3:Put in the pig's hoof. Stir fry for about five minutes. Put in 3 tbsp of old soy sauce, 2 tbsp of raw soy sauce, 3 tbsp of cooking wine, and some pepper. Add in the rock sugar. Stir twice. Add water to the pig's hoof.
Step4:Heat for about ten minutes.
Step5:Put the food in the pot together into the pressure cooker. Put it on the pig's hoof. About 40 minutes. After the autoclave is deflated. Open it. First pour the soup back into the wok. Put the Hericium Mushroom into the wok. Cook for about 15 to 20 minutes according to the amount of soup. The more mushrooms are cooked, the better they taste.
Step6:When the soup is almost finished, put the boiled pig's hoof in it, add some salt, stir fry it, and take out.
Step7:Just sprinkle with coriander.
Cooking tips:1. Some people think that the mushroom is not clean, you can blanch it with water first. 2. It can be stewed for more than an hour without pressure cooker. 3. You can also stew the Hericium Mushroom in half an hour in advance. There are skills in making delicious dishes.
