This braised sea cucumber with Scallion has always been a reserved item in my family's dinner menu. Because sea cucumber is often mentioned in the collocation of abalone wing ginseng , this dish will be a little grand whether it is on the table or it sounds a little grand. Even if we use fresh sea cucumber, I think we can also express the host's respect and sincere welcome to the guests at the family banquet

Step2:Pour in a little more oil than usual. First put in ginger slices. After a few seconds, put in green.
Step3:Small fire will be green and ginger stir to change color. Remove and discard.

Step5:Use a small pot to boil a pot of clear water. Put the sea cucumber into the pot after the water is boiled. Blanch for two minutes, then leave the fire. Cool the water. This step is to remove the astringency of sea cucumber.
Step6:Take out the sea cucumber carefully. Change the knife into strips. Then soak it in water for standby.
Step7:Heat the scallion oil in the wok. Put the sea cucumber in when it is 60% hot.
Step8:Stir fry for about half a minute. Pour in the soy sauce. Continue to stir fry until the sea cucumber is colored.
Step9:Pour in two tablespoons of high soup (add water of green onion leaves - boil with water of green onion). The water volume is slightly lower than that of sea cucumber. Add sugar and salt to taste. Heat for two minutes.
Step10:Pour the thick water starch into the pot. Wait until the soup thickens and all can be hung on the surface of sea cucumber and turn off the heat.
Cooking tips:1. Sea cucumber is easy to taste. The cooking time should not be too long. Otherwise, the volume of sea cucumber will shrink seriously. 2. If you use black ginseng or fresh sea cucumber, you can use high soup or clear water to make soup. If you use huangyushen, it is suggested to make soup with high soup or onion water. 3. The way of this dish is to make the soup thick and less. Just wrap the ingredients. In fact, rice mixed with soup will be better. If it is not a family banquet occasion to make this dish, I will pour the rice directly into the stew to eat.
