Step1:Tear off the reddish brown skin of the squid. Take out the vertebrae similar to the plastic pieces in the belly. Discard all the left whiskers outside. Cut open the squid. Clean the inside and cut the squid with a slanting knife. Boil the water in the pot. Put the squid slices into the boiling water. When you see the squid slices curling, immediately remove them. Soak them in cold water. Prepare celery, pepper, ginger and garlic.
Step2:Put oil in the hot pot, stir fry ginger, garlic, pepper and celery for about one minute, and then pour in the blanched squid, seasoning salt, soy sauce, chicken powder and cooking wine, and thicken them with cornstarch in about 30 seconds.
