There are many ways to eat abalone. What I make is neither French food nor Cantonese soup. It's a simple northern way of eating.
Step1:The abalone had been cleaned by the owner when he bought it. The meat was separated from the shell. Wash the abalone meat with water. Brush the shell surface clean.
Step2:Onion, ginger and garlic. There is no ready-made shallot at hand. If there is, cut the shallot into pieces. Add the sauce and thicken it.
Step3:Stir fry onion, ginger and garlic with olive oil. Cooking wine. Oil consumption. Seafood soy sauce (I used sushi soy sauce instead of seafood soy sauce when I ran out of seafood soy sauce at home) for seasoning. I put a small spoon each. The specific amount depends on the personal taste.

Step5:Blanch abalone meat for three minutes. Take it out. The abalone shell should also be blanched to ensure the sanitation of the dish.
Step6:Put some olive oil in the pot. Stir fry the onion, ginger and garlic. Add abalone meat, oil consumption, seafood sauce and cooking wine. Add some water (chicken soup is better). Add a small amount of pure pepper. In a moment, fish out the abalone. Pick out the onion, ginger and garlic. Add starch sauce. Thicken. Put the abalone in the sauce. Done.
Cooking tips:When you buy abalone, you can let the owner clean it. The meat and the shell should be boiled. No salt or sugar for seasoning. There are skills in making delicious dishes.
