Step1:Snails soak for 24 hours. Change water several times in the middle of the way. Spit out the mud.
Step2:Cut a small opening in the back shell with pliers so that it will taste good when cooking. It can also remove intestinal impurities when blanching.
Step3:Put the snails and cooking wine into the pot after the fire is over. Cook more. Sterilize. Remove froth, wash and drain.
Step4:When the oil in the pot is hot, pour all the ingredients into the pot and stir fry until the red oil is out, then continue to stir fry for 3 minutes.
Step5:Stir fry for a few minutes and then pour in a bottle of beer. Cover the pot and turn it to a low heat for 15 minutes. Then put in sugar on the high heat. Stir fry until the sauce is collected and then add chicken essence and scallion.

Cooking tips:Beer depends on the number of snails. I used a 3 Jin bottle just right. There are skills in making delicious dishes.
