Step1:Spread tin paper on the baking tray. Evenly apply salt, black pepper, soy sauce, cumin powder and chili powder on the pig elbow (the seasoning proportion can be adjusted according to the personal taste. I only use a small amount of cumin powder to rub many others). It's better to cut some gaps in the elbow to taste.
Step2:Cover the elbows with plastic wrap and refrigerate for more than 2 hours to marinate them (the longer the time is, the better, but don't let them go bad
Step3:Before taking out the pickled elbows, first put olive oil in the pot. Then cut the onions into small pieces. Put them in the pot together with garlic. Remove and discard the garlic when it turns golden yellow. Heat over medium heat until the onion softens. Add 1 tbsp brandy. Stir for a while and out of the pot.
Step4:Pour the fried onion juice on the marinated elbows. Cover with tin paper and put it into the preheated oven. Unpack and preheat to Gas
Step5:Bake for 2 hours. Then remove the tin paper and bake for 12 minutes to make the outer skin of the elbow crisp
Step6:Take out the elbow. When the soup is made, it is the best dip
