Step1:Wash and cut the cuttlefish. One cuttlefish can be cut into 45 sections (as you like. It can be long or short). Drain the water for use.
Step2:Wash and cut scallion and red pepper. Wash and cut ginger into pieces.
Step3:Heat the oil in the pan. When the oil is smoking, put the fish in the pan one by one. Fry more often (the skin will fall off if you turn it too early). When you shake the pan, the fish can slide and turn over. In the same way, fry the other side.
Step4:After both sides are fried, put the onion, ginger and pepper into the pot and stir fry with the fish. Stir to taste. Then pour cooking wine (a little bit more) and stir fry. Finally, add raw soy sauce to taste (a little old soy sauce can be added. The color will be darker). Cover the pot and simmer for 34 minutes. Open the pot cover and stir fry for a while and then start the pot.
Cooking tips:1. The saury in autumn must be drained. The oil temperature should be high when frying the fish. You can't turn the fish in a hurry. In this way, you can fry the fish without peeling. 2. Do not pour water. Put more cooking wine properly. There are skills in making delicious dishes.
