Friends who have been to Hainan or Thailand or Vietnam in the tropics must have noticed that garlic, millet pepper, lime (small sour orange) and soy sauce are indispensable ingredients in the stalls on the streets and in the restaurants. During a visit to Lecheng island next to Boao, I found that there was a farm restaurant where I pickled garlic like this. It was very delicious. So I asked the owner about the salting process. It's really good to try it back.
Step1:The ingredients are shown in the picture.
Step2:Wash the garlic. Dry it with kitchen paper.
Step3:Remove the dirty garlic.
Step4:Slice garlic. Dice millet and pepper.
Step5:Add a little salt.
Step6:Squeeze in the lemon juice. In Hainan, it's pickled with the local small lime, also called small sour orange. It's not very good in the north, so I use lemon instead
Step7:Stir well and put it into a sealed bottle and marinate it for about 1 week. When it's hot, remember to marinate it in the refrigerator.
Step8:The omnipotent pickled garlic can be rice, noodles or a little raw soy sauce. Dip in white meat, elbows, ribs Just one word. Fragrance.
