Step1:Cut the carrot into pieces. Blanch the beef in the boiling water to remove the blood foam.
Step2:In the bottom of the pot, fry Pixian bean paste, star anise, ginger and garlic, fragrant leaves and pepper. Put them into beef and stir fry. Then add soy sauce and sugar and stir fry for several times.
Step3:Add water and simmer for about two hours. When the beef is ripe, add carrots, salt, soy sauce and heat it up.
Step4:Turn the heat until the beef is soft. Sprinkle some scallion at last to make the pot.
