If there's a kind of food that can be called eat without tiredness , it's it for me. Brine noodles is the name given to it in the Central Plains. It's not like marinating. It's mainly steam. The marinated mixture of vegetable juice and noodles will let the taste of vegetable brine seep in. Beans are a perfect match. The traditional braised noodles have meat. It's better to eat vegetables instead of mushrooms. It's no exaggeration to say that the taste is more delicious. The following is about three people. Do two or one person share according to this proportion decline.
Step1:Wash mushrooms and slice them (or soak them with dried mushrooms). Cut beans into small pieces. Cut ginger into small pieces. Set asid
Step2:Boil the steamer with water. Scatter the wet noodles on the basket cloth. Steam over medium heat for 15 minutes
Step3:Add another wok. Hot oil (three times of the normal Wok). First cook the star anise to make it fragrant. Then stir in mushrooms, beans and ginger for half a minute
Step4:Add two spoonfuls of old soy sauce. Add water (about 600ml). Cook until the beans are fully cooked. Let the mushrooms boil for fragrance. Put salt (taste it. The saltiness should be higher than the usual stir fry). Then cook for another minute (there should still be a lot of soup at this time. Don't boil the water dry)
Step5:Turn off the fire. Put the steamed noodles into the frying pan. Mix well with the vegetables to make the noodles fully absorb the soup in the frying pan
Step6:Cover the wok and simmer for a while. During this period, you can lift it and stir it again until the soup is completely absorbed
Step7:The steamer used to steam noodles just now (to see if there is not enough water in it, add some more water. Boil it). Spread a layer of cabbage leaves on the cage cloth. Put all the ingredients in the frying pan together with the noodles and vegetables into the steamer. Steam for another 15 minutes on medium heat. That's it.
Cooking tips:For the second time, put vegetable leaves on the basket cloth to avoid too greasy the basket cloth. Because the noodles mixed with vegetable juice are already oily and the color of soy sauce is hung. It will be difficult to wash the basket cloth directly. In the end, you must steam the noodles for another 15 minutes to taste better. After steaming, you can put the noodles back into the frying pan. Take out the leaves on the basket cloth and cut them. Mix the noodles in the frying pan and make them part of the side dish. This recipe also appears in my book four seasons · vegetarian. This book takes the four seasons as the main line.
