Crucian bean curd soup is a famous dish of Han nationality. It belongs to Cantonese cuisine. It tastes salty, fresh and delicious. Crucian carp has a very good milk promoting effect. With tofu, it can replenish qi, nourish blood, strengthen the spleen and widen the middle. Tofu is also nutritious and high in protein. Step1:One crucian carp. Wash and remove the internal organs. Use a knife to count on the fish (see figure for details). Then put it into a container. Sprinkle some salt on it.
Step2:After the crucian carp is salted, put in two tablespoons of cooking wine, spread the fish evenly, and develop it for 20 minutes.
Step3:Cut the peppers, ginger and scallion into strips.
Step4:Cut the tender tofu into four small pieces. Wash a handful of Flammulina mushrooms.
Step5:Put the oil into the pot. When the oil is smoky, put the crucian into it. Fry the two sides of the crucian until golden.
Step6:After the crucian carp is fried, put in the section of Tianjiao, ginger, pepper and sauteed incense.
Step7:Stir fry the shredded ginger. Put in some water. Cover the pot. Bring to a boil.
Step8:When the soup is boiled and the milk is turned white, put in the tender tofu and continue to boil.
Step9:Boil the soup over high heat. Cover the pot and cook for five minutes. Put in Flammulina mushroom and salt, and then cook for one minute. Flammulina mushroom is almost cooked. Put in a proper amount of chicken essence and add white pepper. Then you can start the pot.
Step10:After the pot is filled with plates, put in the coriander, scallion and white silk, and then you can eat them
Cooking tips:Carassius auratus is fried to two golden sides as much as possible. The boiled soup is more creamy and white. There are skills in making delicious dishes.
