As a Cantonese, I liked and fell in love with the Mid Autumn Festival to eat ice skin moon cakes. So I began to DIY ice skin moon cakes and make my favorite stuffing. Today, I'll make purple potato ice skin moon cake. PS - the main material is the skin material, the auxiliary material is the filling. The ratio of the moon cake skin to the moon cake filling is 3-7. The following materials are the formula with 20 50g moon cakes.
Step1:To make mooncake filling - 1. Chop the cooked purple potato with the cooking machine. Heat the pot. Pour in the cooked and stir fry to remove the water. Add the white granulated sugar. Stir until the sugar is softene
Step2:Make mooncake stuffing-2. Add cooked and finely cut chestnut meat, maltose, stir fry and soften. Stir fry in salad oil three times. Stir fry until it doesn't stick to the pot
Step3:Make mooncake stuffing-3 cooked stuffing. Cool it. Knead it into a ball. Divide it into 35g. Just 20 portions.
Step4:Making mooncake skin-1. Add sugar powder, milk and salad oil to mix
Step5:Making mooncake skin-2. Over brushing and mixing glutinous rice flour, glutinous rice flour and Chengfen
Step6:Making mooncake skin - 3. Step 5, add step 4, mix evenly. There is no granule. Wrap it with plastic wrap and place for 30 minutes
Step7:To make mooncake skin-4. Steam over high heat for about 20 minutes. PS - depends on the size of various pots and fires. In order to prevent water vapor from entering, I wrapped it with plastic wrap.
Step8:Making mooncake skin - 5. Take out and mix evenly. Cool down. Knead into dough
Step9:15 grams. Just 20 equal parts

Step13:This is a good purple potato moon cake. It tastes better when refrigerated for two days.
