Cooking tips:Pork should be cut as thin as possible. You can use starch instead of egg white. But the meat with egg white will be more tender and smooth. Pixian Douban is better to chop it up with a knife before you put it into the pot. It tastes better. Laoganma's chili oil is really a good thing. It's spicy but not spicy. It's delicious but not hot. You can also put pepper and scallion and garlic on the meat and water it with hot oil. But I think it tastes better. And I don't I really like the feeling that the vegetables are full of peppers. Take off the small time bombs (you know...) The last time you pour the oil, you should clean up the pepper and then pour it. Otherwise, the small bomb will come back.
