After many improvements based on Jun Zhi's formula, according to my eight inch square plate and my oven, I have successfully practiced this formula. -
Step1:Separate the eggs. Beat egg yolk with 10g sugar. Use hand beater. Then add 20g oil. Mix well. Add 20g of milk and mix well. Add another 40g of flour. Mix well. Mix from bottom to top.
Step2:Whisk the protein with 20g sugar until it is wet foaming. Pull it up with a small hook, and then beat it up for one minute.
Step3:Take a third of the beaten egg white and put it into the yolk paste. Mix well. Then put all into the albumen basin. Mix well. Mix from bottom to top.
Step4:Put the batter in the baking tray with oil paper. Put it in the preheated oven.
Step5:Put the baking net in the middle and lower layers. Put the square cake plate on the top. The height is just in the middle of the oven. Avoid the high temperature of the upper tube leading to the crispness of the surface. 175 degrees 25 minutes.
Step6:Animal cream 150ml, beat with 15g sugar. The dosage can be halved according to this. Daub it on my cake which has been cooled. Roll up. Refrigerate for more than 2 hours. Cut open and serve.
