My hometown Xuzhou is rich in burdock. There are many kinds of burdock sauces. But I didn't like burdock since I was a child. Until I came to Japan to study, I accidentally ate a Japanese cuisine called Jinping . I was surprised that burdock can be so fried and eaten at the same time. I also like this dish. It's sweet and spicy. It's very suitable for wine and dishes or meals at present.
Step1:Prepare the materials. My dry red peppers are cut. Just use them directly. If they are spicy, half of them will be enough.
Step2:Wash the burdock. Don't peel it. Cut it into shreds. Put some salt in the hot water. Blanch the cut burdock. Remove the smell of earth.
Step3:Peel and shred carrots. Put them together with blanched burdock shreds. Set aside.
Step4:Put sesame oil in the pot. Don't burn the pot too hot. Put in the dried red peppers. Medium heat is OK. The hot peppers are easy to burn.
Step5:Pour in burdock and carrots. Stir fry until broken.
Step6:First put in sugar. Stir fry for about a minute. Then put in other seasonings.
Step7:Stir fry until the soup is done. Add two spoonfuls of sesame seeds. Stir evenly.
Step8:You can sprinkle some sesame seeds on the surface after you have filled them. They are more beautiful.
