I've been thinking about this stewed noodle for a long time. I've improved it a little according to the way of grandma's neighbor. I'll steam it first and then stew it. So I don't need to worry about the raw noodles. I'll mix it with olive oil after steaming. I don't need to worry about the noodles sticking together to form pimple noodles. I like some soup mixed with food. Just leave more soup at the bottom of the pot. Pour it out and pour it. It's delicious.
Step1:Weigh the flour. Slice the streaky pork. Marinate with a little soy sauce and salt (the dosage is not in the recipe) for 10 minutes. Cut the broad bean into thin strips. Slice the ginger. Slice the onion.
Step2:Add water to the flour and make a hard dough. There is no dry powder in the basin.
Step3:After waking up for 30 minutes, knead the dough into a smooth dough. Use a rolling pin to roll the dough into a large one. Put it into the widest position of the dough press and press it into a thinner one.
Step4:Fold the patch in 1 / 3 from left to right, then cover it from right to left.
Step5:Fold the dough in half. Use a rolling pin to thin it.
Step6:Press out the dough sheet with the pressing machine in gear 7 (the widest gear) and then press out the thinner dough sheet with gear 5. Sprinkle dry powder on the dough.
Step7:Use the third gear of the press to press out the sheet.
Step8:Put the pressed dough into the fine teeth of the press and press out the noodles.
Step9:Steam the noodles in a steamer for 10 minutes. Turn it over once in the middle. Pour the steamed noodles with olive oil. Mix well.
Step10:Wok hot oil. Stir fry ginger and scallion. Pour in pork slices and stir fry. Add beans and stir fry. Pour in soy sauce.
Step11:Add water and beans. Boil over high heat. Cook for about 10 minutes over low heat. Sprinkle in salt to taste. Take out half of the soup.
Step12:Cover the steamed noodles on the dish. Simmer for about 8 minutes. Every 23 minutes. Pour the soup on the noodles once. Mix the noodles and the dish well to make the pot.
Step13:Noodles. A plate of noodles. It's delicious.
Cooking tips:The dough for making noodles should be as hard as possible. At the beginning of mixing, as long as there is no dry powder in the basin. After half an hour, it will be smoother to knead it. My press is in 17th gear. From small to large. So 7th gear is the widest gear. When pressing noodles, keep using dry powder to prevent sticking until the pressed out noodles won't stick. Steamed noodles. Mix with olive oil. It's not easy to stick together. Braised noodles are better with spaghetti. It's easy to taste. There are skills in making delicious dishes.
