I have dried shrimps at home. They are specially made for drying porridge for the boy. But the boy doesn't like salty porridge very much. So I just use shrimps for other purposes. So I have this steamed egg with shrimps tonight.
Step1:Soak dried shrimps in hot water for two hours in advanc
Step2:Mince the soft shrimp
Step3:Add two eggs to a bowl of water. Beat up with salt. Put in a steamer with boiling water. Steam over high heat for 2 minutes, then turn to low heat for 6 minutes. Don't lift the lid after turning off the fire. Let the waste heat in the pot simmer.
Step4:Stir fry shrimp in oil under the hot pot. Put in two pieces of ginger.
Step5:Turn off the heat and add a tablespoon of soy sauce.
Step6:Put the fried shrimps into the steamed egg soup. Sprinkle with scallion.
Cooking tips:When frying shrimp, the reason why ginger is sliced is that children don't like cooking when they eat ginger.
