Living by the sea, of course, requires fresh seafood. At weekends, I have time to go to the mangrove forest to dig the shells. I dig all kinds of shells. It's fresher to take home and make them myself than to eat outside.
Step1:PS - how to deal with the scallops. Wash the scallops with clear water a little (not too hard. They will be washed to death). Then put some salt or pepper in a basin of clear water. Soak for 24 hours. Change the water twice in the middle. Let them spit sand when breathing.
Step2:You can scrub the shells a little before cooking. Boil a pot of boiling water by the way during this period of time. Fully boil a little. Turn off the fire after the water is boiled. Put the shells in the boiling water and scald them until they open their mouths, then they can scoop them up and drain them. PS - you can't boil it in cold water or hot water for too long, because the meat of the shell will be old, and the nutrients in the shell will drain into the water. After all, we are not cooking soup.
Step3:Put in the oil and ginger garlic. Stir fry the fragrant ginger garlic. Put the dried shells in. Stir fry over high heat. In the process of stir fry, some water will also be lost in the shells. Just stir fry the water until it is half dry and then stir fry. Add salt in the process of stir fry. Like to taste heavier. Stir fry with oyster sauce and soy sauce. As shown in the picture, the fried shell is very fragrant. It's eaten in one breath.
