Pea yellow is a traditional snack in Beijing. According to the Beijing custom, we eat pea yellow on the third day of the third lunar month. So pea yellow goes on sale every spring. It's served until the end of spring. There are two kinds of pea yellow in Beijing: Palace and folk.

Step2:Put the yellow peas in the pot and add water to cook until they are soft and rotten. It will take about 2 hours
Step3:Put the boiled peas into the blender, add the sweet osmanthus and stir them into the mud (my blender is not big enough, so I mix them three times). Then pour them back into the pot and continue to heat them to remove too much water
Step4:After that, add sugar. Then continue to fry. Just keep shaking the spatula. Otherwise, it's easy to burn. My stir fry is a little dry. It can be made a little thinner
Step5:Prepare a square container, lay a layer of oil paper on the ground, and then put pea mud into it for compaction and troweling. If it's thin, it won't be so troublesome. Pour it in directly and knock the bottom a few times. Then put the lid on and refrigerate for about 5 hour
Step6:When it's frozen, take it out, cut it into cubes, put it into plates, and then it's ready to eat. The pea yellow made with osmanthus has a strong osmanthus fragrance. It's delicious.
