Step1:Wash the spareribs. Put them into the pot and blanch for two or three minutes. Pour them out. Rinse them with water again. Wash away the impuritie
Step2:Heat the oil in the pot. Stir fry the ginger and garlic
Step3:Pour in the spareribs and stir fry them until they are discolored and slightly burnt. Cook in half a spoon of cooking wine and stir well
Step4:Add 1 tbsp oyster sauce, 2 tbsp tempeh spicy sauce and 3 or 4 pieces of ice sugar, stir well
Step5:Pour in boiling water. Bring to a boil
Step6:Move it to a small pot. Bring it to a boil again. Cover it and turn it to a small pot and simmer for 30 minutes. (you can also simmer directly in the pot. Moving to a small pot is just my habit)
Step7:Stew the spareribs for 30 minutes. Open the lid and turn the fire to thicken the soup. Then you can get out of the pot.
Cooking tips:Different brands of condiments have different tastes. We should adjust the amount of condiments according to the taste of the actual condiments. I prefer Li Jinji. Because oyster sauce and Douchi spicy sauce are salty, so I don't add salt anymore. I just add a few pieces of ice sugar to make it fresh. If it's not salty enough, taste the taste when stewing, and add a little salt as appropriate. There are skills in making delicious dishes.
