There is a small piece of green onion in my backyard. It's about five or six years. I only cut the green part every summer. It's always long. There's enough green onion for the whole summer. I'll apply fertilizer after the last harvest before the fall into winter. The next spring it came out again. It had a beautiful spring and summer supply. It's really a kind of practical plant. At the end of the week, I collected a handful of chopped scallions and made this mini scallion cake with my own cooking lard to stick autumn fat on Junbao. I like it very much. I ate three.
Step1:Slowly add hot water to the flour. Stir with chopsticks to form a cotton batt. Then add cold water and make a very soft dough. Noodles for 20 minutes. Remember to cover / wrap.
Step2:Mix the lard, five spice powder, pepper powder and a tablespoon of flour and salt to make pastry. I just have a little homemade red onion crispy. It's easy to mix. It's more fragrant.
Step3:Clean the green onion, dry it and cut it into green onion. Remember to dry the water. Otherwise, the rolling surface will break easil
Step4:Put oil on the table top. Put some oil on your hands instead of hand powder. Divide the dough into 12 equal parts. Roll them out into rectangle (ellipse). It is about 1mm thick.
Step5:Put on a layer of pastry. Leave an inch or so around
Step6:Sprinkle with scallion. The more, the better.
Step7:Roll up and lengthen. Roll up again into a spiral shape.
Step8:Put aside the rolled scallion pancakes and cook for another 2030 minutes.
Step9:Heat up a saucepan. Take 23 scallion pancakes and put them in the pan. Bake on medium heat for 1015 seconds
Step10:Turn it over and flatten it with a flat shovel. I used a wooden press specially used by Indians to make pancakes. Turn it over again and press it flat. Press it into a cake about 5mm thick and 3 inches in size. Fry it on both sides of the medium heat until golden.
Cooking tips:Note - this scallion cake can be made more. Roll it out and separate it with oil paper. Put it in the refrigerator and freezer to freeze. Fry it when you want to eat it. The rolled dough can be refrigerated for 23 days. Freeze for a month. There are skills in making delicious dishes.
