Step1:Put the soup material into a small pot. Heat it over a small fire and stir it until the paste temperature reaches 65 ℃ and becomes paste like. Then leave the fire. Cover with plastic film and cool it for later use.
Step2:The water in the dough is slightly warmer until the temperature is not hot. Add yeast. When the foam appears on the surface, it means that the yeast is activated.
Step3:Add the main dough ingredients except butter and yeast water into the barrel of the toaster. Then add all kinds of soup. Finally, add yeast water.
Step4:First select a blending procedure. Then repeat it once again. 5 minutes later, take out the dough. Put the softened butter in the tundish and put it into the barrel again. Continue blending until the dough appears thin and unbreakable film.
Step5:Take out the mixing rod. Roll the dough and put it into the barrel. Wrap the mouth of the barrel with the preservative film. Select the rice wine procedure and start the initial fermentation.
Step6:When the dough swells to 2.53 times, poke a hole in the middle with your finger. If the hole does not retract and the hole does not collapse, it is the best fermentation state.
Step7:Gently take out the dough. First flatten the dough with your fist and exhaust. Then roll it round and cover with plastic film. Ferment for 15 minutes in the middle.
Step8:Roll the dough into a square about the size of the baking pan.
Step9:With the help of a rolling pin, put the dough into the baking mold. Spread the dough over the baking mold by pulling and pressing.
Step10:Coat the mold with a large plastic bag. Put it in the oven. Put a plate of hot water on the bottom. Adjust the oven to the fermentation stage at 35 ℃. Start the final fermentation.
Step11:When the dough is twice the size, take out the baking mold and preheat the oven at 190 ℃.
Step12:Brush the surface of the dough with egg liquid. Sprinkle some chives.
Step13:Put the baking mold in the middle layer of the oven. Bake at 180 ℃ for 15 minutes. When the surface is obviously colored, turn off the heat. Move the baking mold to the lower layer. Continue baking for 5 minutes until the bottom is slightly colored and then take it out.
Step14:Move the bread slices from the baking mold to the drying rack. Cover the surface with a piece of baking paper. When the bread is not hot, put the bottom of the bread on the baking paper. Cut two shallow holes with a knife at an interval of 2 cm on the side close to the body. Cut off the uneven edge on the front side. Spread a layer of salad dressing on the surface. Sprinkle with meat floss.
Step15:Roll up the bread. Wrap it with baking paper like candy. Set it for about 10 minutes.
