Step1:Go to the market to select fresh head of silver carp. Split it in half. Make sure that the gills have been cleaned. Wash the blood with water. Dry the fish with kitchen paper. Marinate it for about 2 hours with salt, cooking wine and ginger slices. It's better to put it in the refrigerator.

Cooking tips:The marinating time of fish head should be more than 1 hour. The salt taste should be well controlled. When marinating for the first time, try to wipe the salt enough to make dishes delicious.
