Suddenly I want to make a flower roll. Yes. Pretzels. That's it. Brush a layer of fragrant chicken fir fungus oil, sprinkle some salt and pepper, white sesame and roll a flower roll. It seems to be skillful. But who knows? This is chef Yang's first show of flower roll. In fact, I also made sesame paste rolls by hand. At the same time, I ate a few chopsticks of chicken fir fungus at the same time. The feeling of oil flowing through my mouth was wonderful. Chicken fir fungus, oil, pepper, salt and flower roll out of the cage. Step1:Preparation - 300g flour, 200g warm water and 3G yeast. Pour warm water into flour. Stir with chopsticks to form floccules. Warm water is not hot. Add 1g salt and 5g sugar. The degree of water absorption of flour is different. At the beginning, you can add less water. Observe the situation and add some more. Then knead the dough to a smooth state. Put the dough into a basin, put on a piece of wet gauze, or cover with plastic film for fermentation.
Step2:Take out the fermented dough. Fully knead the dough and exhaust.
Step3:Roll the growing sheet. Please ignore my irregular shape. Cubic meter ^
Step4:Brush a thin layer of oil. The oil I brush can also be sesame oil or other edible oil.
Step5:Sprinkle pepper powder and salt evenly. If you like spicy food, you can add some chili powder.
Step6:Sprinkle another layer of white sesame.
Step7:Cut into strips about 5cm wide. I make smaller rolls. You can cut bigger and smaller ones as you like.
Step8:Overlap the wide pieces. I fold them six times. Then cut them into squares.
Step9:Half cut.
Step10:Hold the two ends of the patch, turn it upside down, close the joint and hide it at the bottom. The roll is ready. I didn't twist it. I turned it directly. Maybe it's better.
Step11:Put out the steamer, cover it, keep waking up for half an hour under normal temperature, and spend more time in winter.
Step12:Wake up. Steam the rolls with water. Steam over high heat for 20 minutes. Don't open the lid halfway.
Step13:Time's up. Turn off the fire. Wait for two or three minutes and then open the lid. The hot and fragrant pretzel rolls out.
