In addition, horseshoe belongs to raw and cold food. It is not suitable for people with deficiency of spleen and kidney and blood stasis. Fortunately, my horse's hooves are usually cooked. What I often do is stir fried pork liver with horse's hooves.
Step1:Remove the fascia and slice the pig liver. Put the sliced pig into a large bowl. Add some pure water. Add a spoonful of cooking wine and some scallion shreds. Soak for 15 minutes. Change the water twice.
Step2:Peel and slice the horseshoe.
Step3:Drain the blood from the soaked pig liver. Add 1 spoon of cooking wine and 1 spoon of raw soy sauce to marinate for 5 minutes. Add another half of the spoon of starch and mix well. Let stand for 5 minutes.
Step4:The pickled pig liver has more juice. Use a leaky spoon to drain the marinade. The above steps can fully remove the fishy smell of pig liver.
Step5:Heat up the oil. It's more oil than usual.
Step6:Stir fry the pork liver quickly. Turn off the fire immediately after discoloration. Use the remaining temperature of the oil to make the pork liver more mature. Stir fry the pork liver and set aside.
Step7:Stir fry a small amount of oil in the wok. Heat the oil, then pour in the red pepper and green garlic (only take the stem) and stir fry until 5 minutes.
Step8:Then stir fry the horseshoe slices.
Step9:Stir fry the horseshoe until it's nine minutes ripe, then pour in the pork liver slices. Immediately mix in salt and pepper. Stir for a few times and you'll be out of the pot.
Step10:Pork liver must be sliced and fried quickly. Turn off the fire if it changes color. If the slice is too thick, it may cause discoloration on the surface. The inner part is not ripe.
