It takes a lot of steps. Many different ingredients. Japanese Ramen looks simple. It's not simple. There are tens of millions of noodle shops in Japan. Every noodle shop has its own exclusive recipe. I don't have a secret recipe for this bowl of ramen. It's the thinnest version developed by myself according to my investigation and try. I feel it's delicious. You can try it.
Step1:Choose the best peeled streaky pork. The proportion of fat and thin is quite. I prefer the one with more lean meat.
Step2:Roll up the streaky meat and tie it tightly with a string so that there is no space in the meat roll.
Step3:Heat a small pan without oil. Fry the streaky pork. The oil will come out during the cutting process. Pan fry each side of the pork rolls. A little golden.
Step4:Making soup - boil a large pot of hot water. Put the streaky pork in and cook. After 15 minutes, skim off the froth. Add the onion, ginger and salt. Turn off the heat and cook for 1 hour.
Step5:Make seafood sauce - pour two tablespoons of soup into the other pot. Add soy sauce, sugar, Undaria, garlic, fish slices and sake. Turn on and off the fire. Put the cooked meat roll in and marinate it. Marinate each side for 20 minutes. Repeat with a small spoon.

Step7:Mix the bottom of the soup - remove all ingredients from the marinade. Only the soup. Add twice the stock. Boil. You can control the salinity yourself.
Step8:Boiled noodles - boil in a large pot of water. Put in fresh ramen. About 5 minutes. Feel the soft hardness at any time. After controlling the water, put it into the bowl immediately. Wait for the soup to be poured. I make my own ramen. Because the formula is still in the experimental stage, I will omit it first. Fresh Japanese Ramen is recommended. It can be bought on Taobao. Don't use other noodles. The taste is not right. Ramen is alkaline water. Firm and chewy
Step9:Fill the bowl, put the noodles at the bottom, pour in the high soup, arrange the noodles, sliced pork with five flowers, sweet corn, boiled green bean sprouts, Undaria pinnatifida, half soft eggs and chopped shallot. It's done.
Cooking tips:1. If you use Chaiyu slice, the dosage is one slice. If you use firewood fish, you can use two tablespoons. 2. Put the eggs in the mixed seafood sauce and submerge for several hours. The taste is better. 3. I forgot to write garlic in the ingredients list. I added a clove of garlic to the seafood sauce. Just put it down. There are skills in making delicious dishes.
