Step1:First deal with the meat skin - wash the raw meat skin with clear water. Boil the meat skin with the water added with scallion and ginger and yellow wine for about 15 minutes. Remove the discolored meat skin. Use a knife to remove the fat on the meat skin. The cleaner the meat is, the better. After cleaning, use a pressure cooker to add scallion and ginger for 25 minutes. After natural pressure relief, pick out the scallion and ginger for use.
Step2:Wash the mutton and drain the water. Boil the mutton with the water added with onion, ginger, wine and a piece of white radish. Remove the pieces of onion, ginger and white radish. Combine the meat skin soup and mutton soup and boil them, add ginger foam, scallion, chili powder and salt to taste.
Step3:Pour the seasoned mutton soup into a rectangular baking tray. Freeze it.
Step4:Pour out the slices, decorate them and serve them with the sauce mixed with mud and vinegar.
