I like stewed eggplant with potatoes since I was a child. I always eat two bowls with rice
Step1:Prepare the ingredients.
Step2:Cut potatoes and eggplant into small pieces. Cut streaky pork into pieces, scallion into small pieces and tomato into slices.
Step3:Put some peanut oil into the hot pot.
Step4:Heat the oil and fry the streaky pork until it changes color.
Step5:Then stir fry the onion, tomato and a little white sugar and chicken essence. Continue to stir fry.
Step6:Stir fry and pour in some soy sauce.
Step7:Put in the cut eggplant and potatoes. Put in some salt (to your taste) and I'll put in 1.5 teaspoon. Finally, pour in some cold water and don't need to cover all the dishes. Cover the pot. Turn on the high heat and turn to the medium low heat and simmer slowly. When the stew is almost out of water, turn the lid of the pot and stir fry it. Then stew for a while and collect the soup. The dishes will be stewed.
Step8:It's a good lunch to have a bowl of rice on the plate. Make sure you want to eat it later.
