Step1:Wash eggplant. Cut into hobs for later use.
Step2:Prepare onion and garlic and corn starch water.
Step3:Loosen the oil in the pot. Heat it to 60% heat. Pour in the eggplant pieces and fry until the eggplant becomes soft and take out. Pour out the oil from the fried eggplant.
Step4:Put oil in the pot. Stir fry onion and garlic.
Step5:Pour in the eggplant.
Step6:Add some salt, soy sauce, sugar and oyster sauce. Stir well.
Step7:Pour in cornstarch water.
Step8:Open the pot with water and stir well.
Step9:The finished product is beautiful in color, salty and delicious.
Cooking tips:Eggplant is easy to oxidize and turn black when it is cut. It must be cut before it is ready to fry. If it is cut and fried directly, it will not oxidize. The skin will not change color. This kind of eggplant is such a thin strip. The seller said it is Guangdong eggplant. I bought it for the first time. The skin is very tender. This is eggplant with skin. There are skills in making delicious dishes.
