The neighbor sent a mandarin fish. I decided to cook a sweet and sour fish with coke. When it was half cooked, I found no cooking wine. I found half a bottle of rice wine made by my mother in the fridge. So I released myself to directly serve rice wine. So this is a sweet and sour fish that I released myself to burn. Hahaha.
Step1:After the mandarin fish is cut, wash and drain the water (if you can't wait to use kitchen paper to dry the water). Cut three knives on each side of the fish. Put salt on and marinate for ten minutes.
Step2:When the oil is hot to 50% of the heat, stir fry garlic and ginger until fragrant. Fry until the garlic and ginger turn yellow, remove and discard.
Step3:Deep fry mandarin fish until golden on both sides.
Step4:Pour in coke. Add two or three pieces of ginger and garlic. Add cooking wine, soy sauce and vinegar.
Step5:The fire is over. Scoop up the soup with a spatula and pour it on the fish. Turn the fish over every few minutes.
Step6:Take the juice out of the pot. Sprinkle some dried osmanthus on the fish for ornament (you can also use scallion).
Cooking tips:I use sweet wine because I don't have cooking wine. As a result, it's too sweet after being out of the pot. So try not to use rice wine instead of cooking wine. There are skills in making delicious dishes.
