This dish is the most frequently made dish in my family in summer. The mixed vinegar is very appetizing. It's a refreshing concoction in the bitter summer.
Step1:Prepare some dried agaric. (how much depends on your own household consumption.) I bought a small fungus specially used for cold mixing. If it's a big fungus, I need to change the knife and cut it smaller after soaking.
Step2:Soak the dried fungus in cold water for about 1 hour (2030 minutes with boiling water). If you are not in a hurry, cold water is recommended. During the brewing of agaric, you can peel the garlic and cut it into grains. Wash and dice the hot millet. Wash and cut parsley into small pieces.
Step3:Soak the fungus. Wash it. If there is any impurity in the root, remove it.
Step4:Put water in the pot. The amount of water is the depth of the knuckles of the index finger after submerging the fungus. Boil the water for about 15 minutes.
Step5:Prepare some vinegar. Add salt, monosodium glutamate and sugar to vinegar and mix well with chopsticks. Then pour the vinegar into boiled water and stir well. Pour into the fungus.
Step6:Add a few drops of zanthoxylum oil to the soy sauce. Stir well and pour into the fungus.
Step7:Cut coriander, garlic, spicy millet. Pour them into agaric together. Stir well.
Step8:Finished product.
Step9:The acidity is just right. Very refreshin
