My favorite snack in my school days. None of them. In Wenzhou we call it wheat cake. No matter the thin and thick ones, the plum ones and the salted ones are very delicious.
Step1:After the plum vegetables are soaked in advance, they are cut into small pieces with a knife.
Step2:Sprinkle salt on the flour and stir. Pour the hot water into the flour. Stir on one side.
Step3:Cover the flour with plastic wrap or wet cloth and wake up for more than 10 minutes.
Step4:Mix all the ingredients for the filling together for later use.
Step5:The wake-up dough is divided into six large dosage forms. The unused ones can be covered with a plastic wrap first to avoid being hard to make.
Step6:Take a dose and flatten it. Roll it into a round shape with a diameter of 15cm.
Step7:Fill in the filling and fold it up (like a bun) and flatten it.
Step8:Roll slowly with a rolling pin. If you want to be very thin, you need to be slow. It's easy to break if you push it all at once. The rolling can thin out the plum vegetables inside.
Step9:Heat the pan and pour the oil.
Step10:Put the rolled dough into the cake and turn it by hand. The oil will be evenly distributed on the cake. At this time, use medium fire.
Step11:Turn it gently every 10 seconds until there is a little yellow on both sides. If you want to eat crispy food, fry it again. Touch the surface a little hard. If you want soft pancakes and crispy pancakes, it depends on your personal feeling. It's not difficult. Come on. Remember - if you stick your teeth at the entrance, it means the cake is not cooked yet. You need to fry it again.
Step12:I made some soft and crispy ones today, but they all taste good.
Cooking tips:If you want to eat very soft, you can use hot water to make noodles. If you want cold water, the taste of noodles will be a little hard. There are skills in making delicious dishes.
