Anti sand is a very traditional cooking method in Chaoshan, Guangdong. It's syrup made of white sugar. Put the fried ingredients in it and wrap it in icing. The most famous local anti sand snack is anti sand taro, two-color anti sand (taro + sweet potato). It is a perfect dessert. The key to anti sand is to boil sugar. Except for the ratio of sugar to water, it's also important to judge the state of syrup and stir fry. The traditional way is to add some scallion. It's better to add fragrance and remove greasiness.
Step1:400g Lipu Taro peeled and cut into 2cm square long strip
Step2:Heat the oil pan to 60%. Fry the taro for about 8 minutes. Drain the oil
Step3:Leave a thin layer of oil and stir fry the shallots. Pour in 100g of sugar and 30ml of water and mix well
Step4:Keep boiling syrup on a low heat. Stir it occasionally. When the syrup changes from a big bubble to a dense bubble, fry the taro quickly and wrap it in syrup
Step5:Put the pot out of the heat. Stir fry until the taro is frosted evenly.
Cooking tips:1. When you stir fry the taro, you can put a fan on the edge of the pot to blow it or move it to the ventilated place to cool it better. 2. Sweet potatoes can also be used to make delicious dishes.
