The dumplings we make seem a little big. We can make them according to our own needs. -
Step1:Clean the cabbage. Use a small whirlwind chopper to make the cabbage into cabbage powder. Sprinkle salt on the cabbage to kill the water.
Step2:After 10 minutes, squeeze out some water from the cabbage, and then pour peanut oil into the cabbage. Stir evenly, so that the oil can cover the cabbage and keep the cabbage moist.
Step3:Beat ginger and scallion into chopped scallion and ginger with a blender. Put minced meat, shrimp skin, chopped scallion and ginger and soy sauce in a large basin. Stir in one direction and mix well. Wake up for 15 minutes.
Step4:Mix the cabbage and mince together. Stir clockwise and evenly. Stir the mince vigorously.
Step5:Knead the dumpling skin materials in the mixing basin. Cover with a wet towel and wake up for 15 minutes. Then knead the dough again. Divide into about 15 grams of each small dosage. Roll it into thin and thick dumpling skin. Put the meat stuffing in the middle of the dumpling skin and make dumplings.
Step6:Boil a pot of water in the soup pot. Put some salt in the pot after the water boils. Then put the dumplings into the boiling pot and boil them. When the dumplings are all floating on the water, press them down. The dumpling skin will bounce back and prove that the dumplings are cooked. (you can also do that - after the dumplings are boiled for the first time, add some cold water. Add cold water for three times. When they are boiled for three times, the dumplings will be cooked.)
Step7:After the dumplings are cooked, they are put out of the pot, put into the plate, dip in some vinegar to eat dumplings. It's delicious.
