Step5:Because the ribs you bought are better. The blood and water are washed clean. You don't need to boil them. But you need to fry them in an oil pan. Fry all four sides. Fix the shape of the surface.
Step6:This step is to put the lollipop, star anise, fragrant leaves, grass and fruit, raw soy sauce and old soy sauce into the ribs and stir fry them for color. At least 3 spoons of raw soy sauce and 2 spoons of old soy sauce are needed.
Step7:Heat water after coloring. Then put in mushrooms, winter bamboo shoots, beancurd and garlic cloves. And wine. I like to put flower wine. Of course, cooking wine is OK. The water is a little less than the ribs. Then simmer for 40 minutes. I used a cast iron stew pot. So when the water was running out, I opened the lid and stirred it with a shovel. To avoid sticking the pot, I also wanted to heat it evenly.
Step8:Final product. Sprinkle some shallots to make the pot. It doesn't matter if this dish is salty. It's just time for dinner.
Cooking tips:Yellow rice wine is more full-bodied and refreshing. More garlic. If the old one is enough, there is no salt. There are skills in making delicious dishes.
