In winter when I was a child, when the Spring Festival is approaching, my mother always cooks a pot of pig skin jelly, with some scallion shreds, some sesame oil and some soy sauce. Step1:The pigskin bought is soaked and cleaned with water. Sprinkle salt and knead repeatedly. Then clean with water.

Step5:Cut the pigskin which is still very strong out into long strips. Put it back in the pot and continue to cook.
Step6:In the process of cooking, the foam on the top should be removed from the water at irregular intervals.
Step7:Put in the soy sauce, the taste is very fresh, and the salt. When you boil it to the pot, there will be dense and small bubbles. The soup will become thick, and it will succeed. If you are afraid that you can't keep it frozen, you can cook it for a while. Less soup will make the pig skin frozen very hard.
Step8:Let the boiled soup cool for a while. Pour it into the container. Put it into the refrigerator until it is cool. Or put it in the shade without the refrigerator.
Step9:Cool pig skin frozen cut into pieces and put them on a plate. If you like dark color, you can add some soy sauce. Correspondingly, reduce the amount of salt.
Step10:Add shredded onion, raw soy sauce and sesame oil, and then you can eat it.
Cooking tips:1. The fishy smell of pigskin can be removed by repeatedly rubbing it with salt. 2. In the process of boiling, put in the water such as onion, ginger, star anise, cinnamon, fragrant leaves and so on, boil for a while and then pull them out. Don't wait for the onions to boil. Then the soup will become unclear. It's not crystal pig skin frozen. 3. The grease on the pigskin must be scraped clean. Boiled water is actually very easy to clean. 4. In the process of boiling, the froth must be removed. Otherwise, there will be a layer of dirty things floating on it after freezing. 5.
